Although some coffee professionals see the mocaccino as sacrilege (“What's the idea of ​​mixing cocoa with coffee? 🙄), it's still one of my favorite drinks. And yet, I can tell you that I love coffee!

What is the mocaccino? 

But first, what is a mocaccino? You got it, it's a drink made from coffee and cocoa, but that's not all! Hot milk is also added, frothed using a steam nozzle. You may also happen to come across a mocaccino on which whipped cream has been added (but that's only for the greediest!).

There are different variations of this recipe, but normally a mocaccino consists of: 

  • a shot of espresso
  • 100% cocoa (unsweetened)
  • milk froth

And that's all. 

You are free to add sugar, of course.

However, other ways of doing things can be found. For example, some like to use chocolate, rather than cocoa.

Otherwise, it is possible to add coffee syrup. This makes it possible to assert the taste of the coffee which can sometimes be masked by too much milk or too much cocoa. 

You can also add a topping on the cup. As I mentioned, it can be whipped cream, but also cocoa powder, hazelnut chips or chocolate coulis. 

After all, everyone can adapt the recipe to their own taste. But personally, nothing will dethrone the original mocaccino recipe !

The importance of ingredients 

I would like to share with you my recommendations regarding the ingredients that you will need to make your homemade mocaccino . 

For some, using specialty coffee (including high quality coffee) in a mocaccino is seen as a crime! I do not agree. For my part, I think it is important to use good ingredients in each recipe that we make. 

It wouldn't occur to a great chef to use low-end products to get a Michelin star… So why deprive yourself of good ingredients when you have the possibility?

Again, I invite you to use a quality product. Of course, finding good cocoa is not as easy as finding good coffee.

Well if you prefer, you can use chocolate, which therefore contains some sugar, to sweeten your mocaccino recipe . 

  • Milk

So there, it is also and of course according to the tastes (and food convictions) of each one. The ideal is to use whole and organic milk, if possible. You will thus manage to obtain a milk with a very pleasant texture during your tasting. 

You are also free to adapt the recipe and choose vegetable milk, whatever it is. However, if you want to find the silky texture of a good mocaccino, I invite you to turn to specialized references for baristas (easier to lather).

Alpro has started to offer them in supermarkets, in a small format. Do not hesitate to take a look in the milk section of your supermarket. For my part, I tested the special barista oat milk: YUM! 😋 

Preparation steps

For the preparation of your mocaccino, you will therefore need to use these ingredients: 

  • 1 shot of espresso
  • 5 to 10g of cocoa
  • … key of milk

Here are the steps to make your drink:

  • Place the cocoa in the bottom of your cup (or your glass)
    If you opt for cocoa powder, it will be necessary to make it liquid before adding the espresso. For this, you just pour a few milliliters of milk and mix everything to obtain a result close to the texture of a chocolate coulis. 
  • Prepare your espresso and pour it directly over the cocoa. 
  • Froth your milk using your steam nozzle. 
    If you don't have one, you can use a manual or electric milk frother . This will bring a nice silky and pleasant texture in the mouth. If you don't have anything to froth your milk, too bad, it will be for next time! (or otherwise see the tip at the end of the article!)
  • Pour the hot milk into your mug. 
  • Place a topping on the surface of your drink (optional)

Tip : If you really want a little froth, but don't have any of the accessories mentioned earlier, I'm sharing a D system. You can pour the hot milk into an airtight container and shake it all up. your strength for at least 30 seconds. You won't get as good a lather as you would with proper equipment, but it's probably better than nothing!
